I was not aware of quinoa grain until one of my friends suggests me to give my junior A to keep him healthy (Quinoa has a lot of nutrition value). He is very fussy about these healthy foods. One day my husband suggests me to try quinoa cutlet to feed Quinoa to him, as he loves fried food. I tried and was surprised to see his response & still remember those lines “mumma ...yummy hai “ :)
Quinoa has more rich in Proteins than barley, millet and brown rice and lighter than these grains. This is God’s Gift for all vegetarian people because they can have a lot of protein from this grain.
Quinoa cutlet is prepared like any other cutlet means just need to be boiled potatoes for binding, some spices for flavor and breadcrumb for crunchiness. Mix all the things together and fry in hot oil or shallow fry
I shallow fried these delicious and extremely crispy quinoa cutlets in below manner.
Cooked Quinoa 2 Cups (1/2 cup uncooked quinoa)
Boil the potato in the pressure cooker till two whistles and let it cool then peel and mash properly Rinse quinoa well in cold water. Add 2 cup of water in the saucepan and let it boil. Add 1 tsp of salt and quinoa. After 1 boil, reduce the heat low to medium, cover the pan and let it cook for 15 -18 min. once done, fork it up and keep aside.
Now heat the pan over medium flame and add 2 tsp of oil. Once oil gets hot, add cumin seeds. Let them crackle and then add onion. Stir well till that become a little brown. Now add green chilies and chopped ginger. Stir well for atleast1 min. Switch off the flame.
Transfer the mixture into mixing bowl and wait till it cools down to room temperature. Add salt, black pepper, oregano and chopped cilantro and mix it well. Add boiled potato, cooked quinoa and mix them well. Now add tomato sauce and bread Crumbs.
Mix the entire mixture very well. It should have come like Soft dough. Divide the mixture into 12 equal portions and make a square shape cutlet or any shape you like. In another pan or kadhai, heat the oil for frying. Deep fry quinoa cutlet into medium high heat till golden brown. Add 3-4 cutlets at a time don’t overload otherwise oil temperature get cold. Drain the quinoa cutlet on a paper towel to remove excess oil.
Serve hot with tomato ketchup or green chutney and tea or coffee.
1. If you don’t have Bread Crumbs, you can use corn starch/Corn Flour.
2. You can make them in any shape as per your choice.
3. Breadcrumbs and cornstarch quantity also depend on boiled potato texture, if they are too soft you might need to use extra quantity. They should come in proper shape.
4. Instead of Tomato sauce, one can use Green Chutney also.
