Navratan korma is a vegetarian muglai dish made with vegetable, nuts, and paneer. Navratan korma consists of two words Navratan and Korma, Navratan means Nine Gems, that show it is made of different nine vegetable or nuts, and korma means vegetable cooked in the spiced sauce made with yogurt.

Navratan korma is spicy, nutty and creamy and slightly sweeter gravy. In original recipe pineapple is also use that gives an extra sweet flavor, I don’t have so didn’t use.

Three steps consist in Navratan Korma:

  1. Fry and blend the onion with yogurt
  2. Boil/Fry/Shallow fry the veggies.
  3. Prepare the gravy.




  • Onion 1 Large
    Potato 1 Medium
    Tomato puree 1 cup
    Carrot 1 Medium
    Green Bell Pepper ½ cup (cut into square)
    Red Bell pepper ½ cup (cut into square)
    Green peas ¼ cup
    Mushroom ½ cup
    Green beans ½ cup
    Cashews 1 Tbsp.
    Raisins 1 Tbsp.
    Whole Red Chilies 2
    Yogurt 2 Tbsps.
    Ginger 1’’
    Garlic 3 cloves
    Red Chilly Powder ½ tsp
    Cumin Powder 1 Tsp.
    Coriander Powder 1 Tbsp.
    Kasoori Methi ½ tsp
    Garam Masala ½ tsp
    Milk/ Fresh Cream 1 cup/ 3 Tbsps
    Sugar 1 Tbsp.
    Salt To taste
    Oil 2 Tbsps.+2 Tbsps.
    Cilantro For garnish


Step 1

Sliced the onion, chop the bell peppers, cut the potato into small square pieces and grind the ginger and garlic in the mortar and pestle to make a fresh ginger garlic paste.

Step 2

Heat 2 tbsp. oil in a pan, and add sliced onion and sauté till little dark brown. Switch off the flame and let it cool.

Step 3

Once it cools at room temperature, grind it along with yogurt and full red chilies until a smooth paste.

Step 4

In another nonstick pan add 2 tbsps. of oil over medium high heat and stir-fry all the veggies. First add potato because it takes a long time for the cook, sauté it for 3 – 4 min. Then add carrot and stir -fry for another 2- 3 min.

Step 5

Add Green bell pepper and red bell pepper and stir-fry for 2-3 min. add mushroom and frozen peas. Slow the flame and cover and cook it further 5 min.

Step 6

In the same pan add onion paste and sauté for 2 – 3 min.

Step 7

Then add ginger garlic paste and again sauté for 1 min. Add Coriander powder, cumin powder, and red chilly powder and mix it well.

Step 8

Then add tomato puree and cook it 5 – 7 min or till gravy leave the sides. Now add ½ cup of water and milk (Milk gives richness in the gravy).

Step 9

Let it cooks 3-4 min. (Adding milk is totally optional). I prefer to add milk instead of fresh cream so I have added more milk 1 cup. Now add all the stir-fried veggies.

Step 10

Add paneer to the gravy and mix it well. Then add all nuts (Cashews and nuts) and give a quick mix. Slow the flame and let it cook for 4 -5 min so veggies and nuts absorb the spices flavor.

Step 11

Now add 1 tbsp of cream and Kasoori Methi and garam masala and finally garnish with cilantro.

Navratan korma is ready to serve with Naan and paratha.


1. You can shallow fry the paneer also. I have immersed paneer in the hot water till that gonna be to add in the gravy.

2. You can add any veggies.

3. Veggies can be deep fried or boiled. I prefer shallow fry it gives the cushiness in the gravy.

4. If you like to add fresh cream then does not add more milk, ½ cup of milk should be sufficient.

5. If you want to add pineapple then don’t add sugar because pineapple gives the sweet taste in the gravy.
