Happy Akshaya Tritiya to all. Offering yellow color sweets and clothes to lord Krishna are considered very auspicious on this day. Today, I thought of making something similar so I prepared Mango Shrikhand.
Mango Shrikhand is very popular dessert in Maharashtra region and Gujrat. Mango Shrikhand is also known as Aamrakhand- Aamra means mango and Shrikhand are mango based sweet dish so Mango Shrikhand is dessert prepared with yogurt and mangoes.
In few regions, mango Shrikhand is a serve as side dish with roti, however, we always like it as dessert.
Mango Shrikhand is used to prepare with hung curd and mangoes. Mango Shrikhand is thick but not thick as other basic Shrikhand. It is thick, soft, creamy and delicious and once you taste you will ask more.
Mango Shrikhand: Thick curd blend with mango puree then add Kesar milk, pistachio, almond and flavor with cardamom powder. I didn’t have pistachio so could not add but recommend to use.
Mango Puree ¾ cup Hung curd 1 ½ cup Cardamom 3 Saffron 8-10 tread Milk 1 tbsp. Sugar 6 tbsp. Chopped nuts 2 tbsp. + Garnish
Place the curd in the muslin cloth and tie it. Nowadays its summer season so would be a chance to get sour if you leave outside. So I kept in the refrigerator for 3-4 hrs.
Soak saffron in the warm milk and mix it well.
Once yogurt stained nicely. It comes in a semi-solid/thick form. Transfer hung curd into the bowl.
Whisk it with the whisk. Now add mango puree.
Add sugar, crushed cardamom powder Whisk it again until you get a smooth consistency. Now add saffron soaked milk and mix it
Add dry fruits like almond and pistachio. I have added only almond and mix it. Keep it refrigerated for about 3-4 hrs.
Garnish with almond and serve chilled Mango Shrikhand.
1. Adding sugar is depending on sourness of mangoes if mangoes are sour then add more sugar.
2. You can use any kind of mango just be make sure it has good flesh.
