In this cold weather, what could be better than piping a hot yummy Soup. Today I am posting light and full of flavor recipe for a restaurant-style lemon and coriander soup.

I tried my tongue on this amazing soup in one of the best Indo-Chinese restaurants in our area and fell totally in love with it as flavor from lemon, coriander and veggies refresh me. I just tried the same soup over the weekend and it comes out very well.

This soup has the delicate flavors from the stock and vegetables.  Carrot gives it a mild sweetness whereas lemon, cilantro gives an aromatic flavor in the soup.

Lemon is the best source of vitamin C, helps weight loss and cilantro too have numerous health benefits like aids digestion, lower bad cholesterol and raise good cholesterol.

Veggies: I have added winter veggies’ sitting in my fridge like cabbage and carrot. Feel free to add any veggies of your choice like a mushroom, baby corn, beans. This soup is clear soup so make sure it should have more water content.

Ingredients

  • Onion 2 tbsp. (finely chopped)
    Cabbage 2 tbsp. (finely chopped)
    Carrot 2 tbsp. (finely chopped)
    Green chilies 1 tsp.
    Garlic 1 tsp (finely chopped)
    Cilantro/Coriander leaves 1/3 cup (finely chopped)
    Corn flour 1 tsp
    Water 1 tbsp.
    Vegetable stock 1 ½ cup
    Lemon Juice ½ tbsp.
    Black pepper 1/8 tsp (freshly grounded)
    Oil 1 tsp.
    Salt to taste

Method

Step 1

Heat oil in the saucepan over medium flame. Add garlic and green chilies. Saute until raw flavor of garlic goes away. Add chopped onion. Saute till it become translucent

Step 2

Add cabbage and carrot. Mix it well and cook for 2 min. then pour vegetable stock or water.

Step 3

Mix it well and let it come to boil. Add corn flour and water mixture and lemon juice.

Step 4

Add crushed black pepper and chopped cilantro.

Step 5

Add salt and let it cook for 5 min over medium to low flame.

Lemon and coriander soup is ready to serve.

Notes

1. Instead of using vegetable stock, you can add water too but Vegetable stock gives a distinct flavor to the soup.

2. Corn flour helps to thicken the soup. if you don’t want to add, you can skip it.
