Eggless Cashew-Pista Cookies/How to Kaju-Pista Cookies at home

Cashew and Pistachio Cookies/ Kaju –pista cookies: These are one of the most preferred & delicious cookies in India. Very easy to make and love by every age group.

These Kaju Pista cookies are eggless made with pistachio and cashew, flavored with cardamom powder and kewra to make them perfect tea-time cookie. The addition of custard powder gives them a wonderful taste and aroma. These cookies are crunchy on the top, soft in the center and melting in the mouth.

Kneading the cookie dough: Sieve the dry ingredient and mix with wet ingredient and make the smooth textured dough.  I have added 2 tsp of milk that can be adjusted according to the texture of the flour. Add extra milk If the dough feels dry.

Baking the cookie: Bake them @ 350f for 15-17 min only. Don’t overbake them. It will be soft initially but once it cools down will be crunchy. It will be light brown in color.

These cookies are perfect snack with your favorite tea and you can give them as the gift for Diwali and Christmas.


  • All purpose flour 1.5 cup
    Custard powder 2 tbsp
    Butter 160 gm
    Granulated sugar ¾ cup
    Cashew-pista ½ cup (chopped)
    Cashew Meal ¼ cup
    Milk 2 tsp.
    Kewda essence 5-6 drops
    Cardamom Powder ½ tsp.
    Baking Powder ½ tsp.


Step 1

In a large bowl, add all purpose flour in the strainer

Step 2

Add Baking powder and custard powder. Sieve it well

Step 3

Now add cashew meal and cardamom powder and mix it well.

Step 4

Then add crushed cashew- Pista and mix well.

Step 5

Now cream the butter: add butter and sugar in another large bowl. Whisk till it becomes creamy, light and fluffy.

Step 6

Once it becomes creamy, add half of the dry ingredient mixture and kevda essence.

Step 7

Whisk it again and add all the dry ingredient.

Step 8

Divide the dough into two part and make a log out of them.

Step 9

Wrap the log with butter paper or parchment paper. Keep it in the refrigerator for 30 minutes.

Step 10

Meanwhile, preheat over to 350 f and line the baking tray with parchment paper or silver foil. Now cut them in 1’’ inch thick.

Step 11

Place them on the baking tray giving them proper space. And place them on the middle rack in the oven and bake them for 15 min or until it becomes golden in the color. Once it bakes, take them out from oven and let it cool for 5 min and transfer the cookies to the cooling rack and let it cool down completely. Transfer the cookies to the airtight container and enjoy them. You can store them for 4 weeks.

Cookies are ready to serve with tea


1. Always use good quality of baking powder as It is the main rising agent.

2. Granulated sugar is powder form of sugar. You can use fine sugar too.

3. Butter should be at room temperature.

4. Kewda essence enhances the flavor in the cookies. You can use rose essence/rose water too.

5. You can make cashew meal at home too. Just grind cashew in the coffee grinder or in the blender till it comes in powder form.

6. Keep them in the refrigerator for some time helps to cut them in equal size and whatever shape you like.
