Coconut Cookies are one of my favorite cookies. The aroma of coconut while making these cookies always tempts me. To prepare them, cream the butter and sugar, add all purpose flour and desiccated coconut powder and bake in the oven.

The best trick to get crispy cookies to beat sugar and butter until getting fluffy and bubbly texture. Don’t over mix the flour.

Here is Step-by- Step recipe to make soft and crispy Eggless Coconut Cookies.

Ingredients

  • All Purpose Flour/ Maida ½ cup
    Desiccated Coconut powder ½ cup
    Sugar ¼ cup
    Butter ¼ butter
    Cardamom powder ¼ tsp
    Baking powder ¼ tsp
    Milk 1 Tbsp or as require

Method

Step 1

Preheat the oven to 180? C/375 F. Place a pan on over medium heat; add desiccated Coconut Powder and dry roast it for 2 minutes. In a mixing bowl, sieve Maida, baking powder, and salt.

Step 2

In another mixing bowl, add butter and powdered sugar and mix it until gets light & creamy texture.

Step 3

Now add flour mixture into creamy mixture, mix it well.

Step 4

Then add coconut powder and milk little by little to make a soft dough. The dough should be very soft.

Step 5

Wrap it with cling or wax paper and refrigerate it for 10 min Take a baking tray and grease it with little oil or ghee and place a parchment paper on it. Take out the dough from fridge and divide into 12 equal portions and make a ball. 1. it slightly with your palm to make disc shape. Make sure there is no crack. Place them on the baking tray spacing 1’’ apart.

Step 6

Sprinkle some coconut powder on the top of cookies. Bake the cookies in the preheated oven on the middle rack for about 12 -15 min.

Step 7

Once bottom starts turning brown take out from the oven and keeps it aside for a couple of minutes. Transfer the cookies to cooling rack.

Coconut cookies are ready to serve. Store it in the airtight container to keep fresh up to 2 -3 weeks.

Notes

  1. 1. Always use butter at room temperature.
  2. 2. You can bake them couple of minute more if you like crunchy cookies
