Cheese stuffed spinach cutlets are very delicious and healthy snacks for evening tea. Spinach has high nutritional value and it is rich in antioxidants and iron and cheese is full of protein value which is good to add in your kid’s diet. Kids always attract with cutlet especially my junior “A”.
Cheese stuffed spinach cutlets are made from mixture spinach, potatoes, spices and stuffed with cheese and use fresh breadcrumbs as a binding agent. Cheese stuffed spinach cutlet can have prepared with shallow fry or deep fried as I have done.
For this cutlet, balance the spinach which gives nice green color in the cutlet. I have used Mexican blended cheddar cheese as stuffing, you can use any cheese. Mozzarella is recommended
Potato 4 medium Spinach 2 cup tightly pack Cheese ½ cup Bread Crumbs 1 cup Oil for frying Salt to taste Black Pepper ¼ tsp. Green Chilies 1 Garam masala ¼ tsp. Cilantro 2 tbsp. Dry Mango Powder ¼ tsp.
Remove the stem from the spinach and wash it well. Bring a large sauce pan of water to boil. Put spinach leaves in the boiling water and boil them about 40 sec to 1 min.
Drain the spinach into colander or strainer and remove excess water out of it. Meanwhile in a large bowl add ice cubes and water.
Once spinach boiled and strained, put the spinach in the ice water and leave the spinach leaf in the ice bath until it is no longer warm. Squeeze out excess water with your hands
Chop them roughly. In the mixing bowl, add boiled potatoes.
Mashed the potatoes with the masher. Add bread crumbs, green chilies, and chopped spinach. Mix it well.
Add salt, black pepper, garam masala, dry mango powder, and cilantro. Mix it well.
Now pinch medium lemon size mixture
Make a ball and flatten by pressing in between your figure.
Place a heap tbsp. of cheese in center over flatten potato mixture and bring all edge together
Make a ball and flatten it. Make all the balls in the same way. Heat oil in the kadhai over medium heat and once oil is hot, drop 3 or 4 cutlets in the oil and fry till both sides become brown.
Once it becomes brown, take them out and keep them in the tissue paper to remove the excess oil.
Spinach cutlet is ready to serve as starter or evening snacks. Serve this cutlet with spicy green chutney or tomato ketchup.
- 1. You can saute the spinach instead of blanching.
- 2. You can add red chilly powder instead of green chilies.
- 3. Adjust the spice level according to taste.
- 4. Instead of dry mango powder, we can use lemon juice.
- 5. You can mix the cheese with the mixture of potatoes instead of stuffing.
- 6. Cheese stuffed spinach cutlet can be made by shallow frying instead of deep frying.
