Besan Sev is a very popular savory snack that goes best with Tea/Coffee. Besan Sev is the main ingredient for bhel, puri chaat. You can store besan sev in the air tight container for 3-4 weeks so prepare in large quantity and can have any time. The only problem with this sev, once you start munching it; difficult to stop.
I prepared sev in 3 batches and below is detailed recipe:
Besan 1 Cup Asafoetida A pinch Turmeric Powder ¼ tsp Red Chilly 1 tsp Salt To taste Hot Oil 2 Tbsp Water ¼ cup
In a mixing bowl, add besan, asafetida, Turmeric, Salt, Chilly powder and mix well.
Now add 1 Tbsp. of oil and rub gently with hand to make bread crump consistency. Start adding water a little (1 TBSP) at a time.
Make a soft sticky dough. Grease your hand with tsp. of oil and knead it further. Grease the Sev maker with oil
Make egg-shaped ball from dough with greased hands. Fill the sev press with dough ball using small hole plate as shown in below picture Start squeezing in hot oil. Deep fry on medium flame on both sided till bubbles drop.
Drain it on a paper towel and repeat the same process with remaining dough. Once it cools down crushed with the soft hand.
Now Besan Sev is ready to serve with tea/coffee and chat. Store in the airtight container up to 2 weeks.
- 1. Adding water quantity depends on the besan quality (I have added 4 tbsp.).
- 2. Do not let come oil to the smoking point because it needs to be fried at medium heat.
- 3. Spices can be adjusted as per taste .
