Aloo-Gobhi Sandwich/How to make sandwich from leftover sabzi

Sandwich for me are not just snacks or breakfast dish, in fact, I can have sandwich any time in a day. I can prepare the sandwich with many things like cooked veggies, cooked beans. I  prepare Malai Sandwich (Spread some cream over bread and sprinkle some sugar grain) and Chutney Sandwich. Chutney Sandwich is my all time favorite dinner. I know…. You are thinking what kind of unhealthy food I eat during dinner, but nobody can stop me having a sandwich.

As I mentioned earlier, I can prepare sandwich with anything so whenever I prepared potato-based curry/vegetable in the lunch my evening snack is that sandwich filled with that curry. Last night I prepared aloo gobhi so today morning my breakfast is aloo gobhi sandwich.

Aloo gobhi/Potato cauliflower sandwich needs few ingredients, which is most likely available anytime at home: Bread, aloo gobi sabzi/dry potato cauliflower curry, some chopped onion, green chutney (if available).

Here is the step-by-step recipe for aloo gobhi sandwich.


  • Aloo Gobhi Curry 1/2 cup
    Onion 2 tbsp chopped
    Green chutney 1 tbsp. (optional)
    Bread 4 slices
    Salt 2 pinch (if required)


Step 1

In a mixing bowl, add aloo gobhi. Mashed it well with spoon or potato masher.

Step 2

Now add chopped onion and green chutney and dash of salt. Mix it well.

Step 3

Now place the slice of bread on the cutting board, trim the edges.

Step 4

Then apply potato mixture over one bread and close with another bread. Press it slightly so that mixtures do not come out

Step 5

Heat the griddle/tawa over medium heat and apply some ghee/melted butter on the bread slices. Now place the bread to heated griddle/tawa.

Step 6

Toast till it becomes golden brown. Flip to other side and cook it till both sides. Lightly press the spatula over the bread to get evenly golden brown.

Cut them and serve with ketchup and chai/milk/coffee.


  1. 1. Meethi chutney/Tamarind Chutney or Tomato ketchup can be use instead of green chutney.
